Goat Shank (Front & Hind) packages contain 1 to 2 pounds of Shank meat depending on your selection.  Each package contains 2 shanks total. The Goat Shanks come from the lower sections of the shoulder (front) and the leg (hind).  Both the front and hind shanks contain the shank bone which adds a fantastic complex flavor due to the nutrient rich marrow in the center of the bones.

Goat shank meat is primarily used for stews, stocks, and curries. Goat Shank meat is very well suited for braising (Cooking with liquid such as a broth or wine) with low heat for a slightly longer duration of time.  We really like to cook these in a crock pot.  If you start the shanks at noon they will be ready by 5 or 6 o'clock
