Organic Grass fed Rack of Goat comes with 1 rack per package.  Each rack of goat is a full rack or 8 ribs and weighs about 1 pound. The Goat Rack is one of the most elegant and tender cuts on the Goat or Cabrito.  These Racks are tender and juicy and are well suited for cooking with any Dry heat, such as a grill, oven, smoking, or even stove top. 

These Racks are not frenched as the picture indicates; however, frenching the ribs is fairly easy.  To French the Rack of Goat, simply remove the connective tissue and fat from each of the rib bones about an inch to 2 inches; don’t worry about the little bits of meat still attached to the bones, as these will cook off during the cooking process leaving you with a beautiful presentation when you serve the rack of goat
