The leg of goat packages contains one Leg.  The bone-in leg weighs about 4-5 pounds and the boneless leg of lamb weighs about 3 pounds. The Goat Leg includes the sirloin area of the goat. You can choose either a boneless leg of goat or bone-in leg of goat.  Bone-in leg of Goat adds additional flavor due to the nutrient rich marrow bone in the center of the leg roast.  The Boneless leg of goat has a slice in the leg where the bone and glands were removed.  The out side of the boneless leg is wrapped in roasting net to help keep the leg meat together during roasting. 

Want a Butter flied leg of goat?  Choose the Boneless leg of goat and once thawed remove the netting and make 2 more slices parallel to the main slice that was made to remove the leg bone, adding 1 slice on both sides of the existing cut will allow the leg to lay flat for fast even cooking on the grill
